Abstract

Chitosan and its oligosaccharides (COS), which are known to possess multiple functional properties, have attracted considerable interest due to their biological activities and potential applications in medicine, agriculture, environment, biotechnology and pharmaceutical industries. In this review, we have summarized the findings of previous investigations that have focused on biological and industrial properties of chitosan and COS.
